This was the new recipe I tried out last night for dinner. When I search for recipes to try, I try to look for things we don't ever have just to change things up a bit. With this recipe, I know how much AJ likes chicken & dumplings, so I thought I would find a recipe we could try out. Needless to say, after it was all said and done, he went back up for seconds, so I'd say this recipe is definitely a keeper! :)
CHICKEN & DUMPLINGS
6 individually frozen biscuits
1/4 C. chopped onion
1/4 C. chopped green pepper
1 Tbsp olive oil
4 C. shredded, cooked chicken
2 cans chicken broth
1 Tsp. chicken bouillon granules
1 Tsp. minced parsley
1/2 Tsp. dried sage leaves
1/4 Tsp. dried rosemary
1/4 Tsp. pepper
Cut each biscuit into fourths; set aside. In a large saucepan, saute onion and green pepper in oil until tender. Stir in the chicken, broth, bouillon granules, parsley, sage, rosemary and pepper.
Bring to a boil. Reduce heat; add biscuits for dumplings. Cover and simmer for 10 minutes or until a toothpick inserted near the center of a dumpling comes out clean (do NOT lift the cover while simmering!)
