Chicken Salad Bake

New casserole recipe of the week went underway on Wednesday! Since the last time around I made a casserole with beef, I decided to take a different route and use chicken. I wanted something simple, yet delicious, so I chose to experiment with the recipe for Chicken Salad Bake!

The recipe is very simple with minimal ingredients. Chicken, onion, green pepper, water chestnuts, mayo, garlic powder, pepper, bread crumbs, and shredded cheddar cheese.

If only I could find a way to provide a scratch and sniff photo for the smell that filled our apartment while this was baking. It was simply amazing. It was at that moment that I decided if the casserole even taste only HALF as good as it smelled, it was going to be a great success! I only came up with one aspect of the recipe that I did not care for and that was the amount of bread crumbs. I feel it was too much and made the casserole seem somewhat dry. But it is definitely one I will make again :)

On the Move

They are finally on their way! Please keep Axton and the other members of the National Guard in your prayers over these next few weeks as they all start their long journey back home. It's one that they, as well as their family and friends back home, have been waiting for for nearly a year now. It's hard to believe how fast this year has gone by, even through those moments where it almost seemed as though time was standing completely still. Please pray for a safe trip home and a smooth transition back into life at home again.

We cannot thank you enough for the support, encouragement, and love that you have given us throughout this long and challenging journey. We are truly blessed with the most amazing friends and family :)

Award Ceremony


On June 29th Axton received an award for the work he has done in the chapel in Afghanistan during this deployment. Most definitely a job well done! :)
