Toss...I mean, Pass the Lasagna

Over the past few weeks I have been out of my 'cooking' mode of trying out new recipes because life has simply been too busy! But now that things have slowed down again (for the next few weeks anyway until AJ returns home yet again!) I am trying to get back into that groove.

I recently came across a cookbook I simply could not resist to purchase. It is the "Taste of Home Ultimate Casserole Cookbook" and who doesn't LOVE casseroles?! I've been looking for a casserole cookbook for quite some time now, but I had been having trouble finding one that used what I like to call "normal" ingredients...or things I have at least heard of before! I have had a lot of good experiences with recipes from Taste of Home, and this cookbook has over 450 casserole recipes and it was only $9.99 if I purchased it for on my Kindle e-reader. Needless to say, it was a done deal.

Today I tried out my first recipe, and it was definitely a big success. I can't say I am going to complain much about taking it to work with me for lunch the rest of the week! :P
